Where are all the comments? You have a great product here. I've had my Ninja Creami for about a year now and experimented a lot. Dole Whip always seemed like it would be rather dull until your version came along. I think it would be fun to substitute most any fruit for the pineapple like strawberries, mango, peach, blueberries, whatever. I do hope Dole Whip fans try your version, it seems like a winner. If I made any changes at all it would be to add a bit of vanilla (but then, you may already be using vanilla protein powder).

So my starter was fed before I put it in the fridge last week and it hasn’t doubled but is very bubbly, and technically is still growing towards its peak. Isn’t that in theory a fed starter?

Is it whole wheat? If it's whole wheat and you fed it equal parts flour & water (by weight), it won't rise as high as a white flour starter--it's just a little thicker so it's heavy. If it looks bubbly and active, I think that's great!

What brand of cocoa powder do you use?

I have been using one called Anthony’s Black Cocoa. Found it on Amazon and the brand is reasonably priced! I think Hershey’s Special Dark would work well, too.

I wonder if you have an opinion on why my bread doesnt see to get a firm film on it after it has been finally shaped into the loaf, just prior to going in the oven ? I take it out of the bamboo bowl and put it on the silicone mat thingy and it just spreads out so quickly that it sometimes wont fit into my Dutch Oven, what do you think ? Is my dough too wet ? am I using too much water do you think ?

Hmm, there could be a few things going on but I would say it's most likely either too high hydration (too much water) combined with not being shaped tightly enough, OR it may have over-fermented which causes the structure to break down, too. Is it very sour when you eat it? If it is more sour than usual, I'd say it's over-fermented. If it isn't then possibly would do better with a little less water in the dough.

On a different note, when measuring, I add the water first, then salt, then flour. So that when I happen to add too much water, I can still remove it, same goes with the flour.

Hello! Unfortunately this recipe would not work without the protein power as that is what makes it creamy in absence of the fat and sugar. If you don’t want a protein version, I’m pretty sure the Ninja Test Kitchen website has a coffee ice cream recipe!

So.....I did your exact recipe last night, but I did it with both a pork sirloin roast, and a venison sirloin, each about 3 lbs, and put them side by side in the same crock pot for 12 hrs. I shredded them both separately in their own containers, and then added juice from the bottom of the crock pot and stirred it in. Lets just say that I'll DEFINITELY be making this again......and again. Thanks for the recipe!

Hello! :) I’d say usually 100 grams of starter, but it depends on how fast or slow I want my bulk fermentation to go. If I mix my dough before going to bed, then I only use 10-20 grams. But if I mix it in the morning when I can keep an eye on my dough during the day, I’ll use 100 grams.

Glad you liked it! :) The amount of fiber in half of the recipe (one large belgian waffle) is 6.6 grams, so I believe that would put net carbs at about 35 grams.

I found this video from your article. Your article is by far the best article I've read on home milled bread. I haven't been autolyzing at all and am totally going to try it now. The tips you gave are fantastic and I can tell you've been doing this for awhile. I also started with a Kitchen Aid mixer but now that I have a Wondermill that I bought off a friend and make bread once a week. I'm also going to kneed my bread longer now. My bread was coming out crumbly and getting holes in the centre but now I realize I wasn't autolyzing and kneading long enough. Thanks!

Yes I have!! Greek yogurt works awesome, too! And a pro to Greek yogurt is you can whisk ingredients without an immersion blender, too.

Great video. The longest period I have gone without feeding my starter is three weeks and it still worked great.
