If you mean for the turrets, you can't destroy them with deflection. You'll unlock an ability later on to destroy them with.

You can turn into the fox by using the Snow Fox Brush located in the inventory if you already have it. But I think you will lose that item when you defeat this boss as part of a side quest and giving you a curio as a reward.

So far the game is running acceptably well on Quality mode. As for the difficulty, I'm pretty early in the game so I can't say for sure, but so far it's not as hard as souls-like.
