Gael will always be the best boss in the FromSoftware lineup games. It's as close to perfect as physically possible. The theme, the arena, the story, and the character design are all spot-on. By the end of the fight, Gael is spinning and dancing around the arena, doing flips while magdumping you with a crossbow and flailing his sword around, throwing the souls of the damned at you, using his flaming cape as a weapon, all whilst a thunderstorm brings lightning down from above. It's the most chaotic, yet grand and beautiful fight that could physically be made. Somehow, this theme perfectly encapsulates the chaos and the beauty in this, as well as the finality of the series. I would never have thought it possible

Imagine traveling back in time and finding someone who had just beaten Gwyn right after the first game came out. You show them this fight, telling them that this is how the series ends. This would be nearly incomprehensible to them

2 beings that Outlived Dragons, Demons and the God themselves, Clashing at the end of everything, fighting for really nothing and with no one to witness it.

It's nice that it's two humans/undead that make it to the end of the world rather than the "everlasting" dragons or "gods".

And now compare this to any Elden Ring song. God damn it, it's even impressive how underwhelming the new OST is.

Rip doge. I like a few of the OST in Elden Ring. Morgott, Mohg, Tree Sentinel, and that's it. It reminds me of ds2 though. DS2 had great ost, but I didn't hear it at all because of how loud the clashing sounds were, and how quiet the music was at equal volumes. But in Elden Ring, I just don't feel the music. Except for the one's I mentioned, those hit me pretty hard. Nothing beats Gael's theme though. The rush I get reminiscing on long battles with him. The lore implications of his battle, and the fact that it is the ultimate finale to the Dark Souls trilogy. The fact that the lore is so damn hard to get in a normal playthrough is so realistic. People haven't the slightest damn clue when they go through life normally. The anticlimactic finish of the Gael fight is so damn perfect too. The scene seems so damn unimportant and bland, but is really the apex of our long journey. GG's old souls.

I would disagree on that. In addition to the songs that were mentioned in the former comment, I would say Godskins's OST, Main theme aka Radagon's OST, Hoarah Loux's and Radahn's OSTs were absolute bangers in my opinion. But throughout all the souls series, including Bloodborne and Sekiro, there is no OST that can overdo Gael's. This OST fits exactly to every aspect of boss fight. A masterpiece, with its sopranoes, violins, additional choir. Literal. Pure. Epicness. There are no words to put this song to its right neither in elvish, in common tongue or dwarvish.

Mohg's and Rennala's themes are excellent but not many other tracks managed to catch my attention really.

This fight is basically a zombie and a homeless man on steroids fighting over a can of paint in the desert. But seriously, one of the best fights in the series. Really encapsulates Souls. Two relative nobody's fighting over a dying world by happenstance and trying to prolonge the inevitable death that comes for everything in the end. But you keep coming back from it, such is your burden and responsibility, to keep pressing onward despite how dark everything is ahead of you.
