1st mistake: You can't use hard bread on soft sandwich fillings. Mushrooms are extremely slippery when cooked, and when you add oily dressings other grilled veggies, gooey slippery cheese and stacks of weeds and ruffage, and what you end up with is a greasy tower of fall apart in your lap on the first bite. 2nd mistake: you drown the poor damned mushroom with olive oil (which turns bitter if it's overheated), pretty much overwhelming and ruining the flavor of the mushroom. 3rd mistake: baking it in the oven instead of grilling it on a cast iron grate or roasting over open flame. Makes mushrooms soggy and greasy. 4th mistake: slicing the mushrooms into 1/4" umbrella shaped flats just makes it easier for them to squirt out from under your "Rock Bread". Note: There's a Bar and Grill a block and a half from my house called Khaki Jacks and they've been making these sandwiches for over 30 years. They DON'T use cheese on them and they DON'T use hard breads. Their sandwiches are incredible and I order one every time we go there (Hint: They don't EVEN use most of the stuff you put on yours). Maybe I''ll post the correct recipe if I get ambitious enough.
