Only difference we pretty much use mild or spicy Italian diced sausage, diced meat ball, and hard boil eggs are also diced to crumb lol instead of being sliced like yours lol but we definitely add fried eggplants in ours too. We do ricotta in ours. I never seen ham being added in ours though. I’m not sure that’s a thing in Pachino Sicily where my grandpa is from though

Depending on the region, my nonna used to make the sauce with italian sausages and mince..Just as you make a bolognese...the rest is pretty easy as in the video....Don't skimp on the ingredients and because the pasta is dry, remember to make the sauce a bit more runny than you would normally. That is so the pasta can absorb the liquid and cook properly and not turn out dry..

Nick, thank you for your insight. My favourite images of your portfolio were two back to back - at 4:45 and 5 minutes - they are so powerful and moving. In particular at 5 minutes! We are small compared to Christ, but he is with us always. :)

a very thought provoking series of photographs. i like the 'dark' nature of the images, to me they reflected the fear and 'brain washing' that religion uses to control people. a brilliant piece of work.
