So this is great. I have a ton of spare rolls of poultry wire. My only concern is that every single other video, blog, or whatever cautions against using poultry/aviary wire instead of true gopher wire which is supposed to last longer before breaking down thus giving the roots a longer chance to get established. I want to just selectively believe this video because it means I won't have to buy any new wire and will have a use for the wire I already have. Have you heard this caution against poultry wire as well? What's your thought?

It's one of the "rules" but definitely not necessary and Gracie talks about it in the video. We have thousands of roses on our farm and it would take way too much time for everyone to find the 5 leafset so we usually just snap them off with our hands.
