Hey im new to all grain brewing. I have a stainless steel fermenter. If i pump the hot wort into the fermenter, that would sterilise the fermenter, right? Any issues with doing this and just letting it cool down naturally overnight in the fermenter before pitching yeast the next morning?
@HomeBrewNetwork
@HomeBrewNetwork Күн бұрын
You can try it, the trouble is if there is a big head space and the steam doesnt kill the bugs/yeast in the air pocket. If its quite full its probably alright, can't be guaranteed though. Cheers!

While I'm in no way a fan of the cans, at least you can buy them just about anywhere, and in a fairly large range of producers and types. FWK's on the other hand, are hard to find in any variety. Here on the Gold Coast, it's pretty much All-In-Brewing's range or nothing, no matter which brew shop you choose. Buying one on-line and getting it freighted? Forget it, you may as well just buy a couple of cartons.

Wine maker commenting here: a stinky fermentation points to stressed yeast (hydrogen sulfide smells like rotten eggs or sewer gas) and at 1.070 even with bread yeast the stress is most likely caused by poor nutrient load. Table sugar is a nutrient desert for the yeast. I have no idea whether tomato paste has enough (or any) nitrogen and other essential compounds they yeast require, but you might use Fermaid O or K rather than what over here is considered by most wine makers a prisoner's solution to a lack of nutrients in wine making. Alternatively, you could simply boil a tablespoon or two of your bakers yeast . Not everyone, agrees, but in my opinion, it makes good sense to prove the yeast with a little sugar before you boil it in your microwave. The dead yeast will provide the living yeast cells with all the nutrients they need to bud and repair damaged cells. One other possible source of nutrient is Vegemite (or Marmite) - more expensive than the yeast, but Vegemite and Marmite are basically cooked yeast.
@HomeBrewNetwork
@HomeBrewNetwork 21 күн бұрын
It wasn't a usual sulphur, not that I've ever experienced, so I've quit using the tomato paste altogether and its no problem anymore, I do add some nutes, but I think I also added nutes to this one just to be sure.. I just use sugar, water, nutes, bread yeast and lactic if needed for the pH and its all much cleaner and no stink these days! hahaha Cheers mate! I just quickly googled and it appears Tomato paste is often over 12% nitrogen.. Interesting.. And has a a heap of other stuff too.. According to the RBS analysis, the organic composition of tomato paste normalized to 100 %, consists of 72.4 % carbon, 12.4 % nitrogen and 15.2 % oxygen. Gavin you should remake the videos on bottle filling and all of them ,,,,,unless you know what to ask for people ain't gonna go back to look at that one.. Like how not to get oxygen in your beer when bottling who thinks of that. 🍺🍺🍺🍺🍺🍺that's
@HomeBrewNetwork
@HomeBrewNetwork 23 күн бұрын
The bottling video is linked in the description, bottling beer at home without oxygen ingress is near impossible without expensive machinery, but that doesn't mean you shouldn't take every possible step to reduce it. There's many myths that the yeast is going to consume it etc which it eventually probably consumes most of it, but the damage is done in minutes well before any yeast can eat the oxygen and its irreversible, it might take a week or 6 months to show its face, but its there. Some videos will be remade though for sure!

I wish we could get fresh wort kits in the US. So far that doesn't seem to be happening unless you know a local brewer who will run off some fresh wort from one of their brews. US homebrew shops no longer carry kits except for maybe one or two (literally one or two shops). If we want kits we have to buy them online from Coopers or Munton's and freshness is always an issue. Novice brewers may not even know kits exist, much less where to buy them. But yeah, fresh wort would be amazing to work with. Great advice and great video. Cheers mate! 🍺

Did you ever try the ramp thing in the RAPT profiles? I normally do that on mine (like up 5 degrees over 3 days) but I’m wondering now if the free rise might be better job. Maybe the artificial heating is bad for the yeast.
@HomeBrewNetwork
@HomeBrewNetwork 23 күн бұрын
I don’t use profiles, I do everything manually, guess I’m just old school 😂 but sometime the yeast struggles with a good free rise so I’ll help it out, that’s usually if I’ve missed that window of yeast activity and it’s slowing down. Cheers!

@@HomeBrewNetwork I like to do most of it manually too but I’ve been using that “temp rise over 3 days when OG hits 1.025” thing for a while now. Though I’ve been chasing attenuation issues as well for a while and exhausted a lot of options, so maybe I just need to let the yeast breathe near the end.

@HomeBrewNetwork
@HomeBrewNetwork 4 күн бұрын
@@feuer-gluat-quoim Never needed too worry about head retention, I think if youre having problems with head retention the problem is more than likely elsewhere in the process. The trouble with auto cold crash is making sure the pressure is kept up, I dont like leaving a gas bottle connected, so I like to check it every day anyway and again manually do it as needed. I solely use it for monitoring rather than controlling, except for the rapt pill controlling the temperature. Cheers!

Even at 15-20psi, won't hurt any esters. If you haven't already done so, check out Dr. Hans Brewing. Pretty much the OG on YT for pressure fermenting. He is usually fermenting above 15psi for most brews, no loss of esters
@HomeBrewNetwork
@HomeBrewNetwork 23 күн бұрын
I’ve been fermenting under pressure for even longer than Hans, I was lucky enough to be one of the first testers of these systems since they were made locally, even before they were on the market. Hans likes the big pressure shock value for his videos. I don’t use pressure to ferment hot 🔥 at all, I just use it to keep oxygen out, just like breweries do and also to make transfer easy. Big pressure has been proven to reduce some esters, not all though, Big pressure can also make dry hopping and transferring problematic, but we all do things differently! Cheers mate!
@viper29ca
@viper29ca 23 күн бұрын
@@HomeBrewNetwork yes, higher pressure, higher temps for faster turn around. No issues dry hopping or transferring using either high pressure or low pressure. Drop the head space pressure, open vessel, insert dry hops, close vessel and flush the O2 out of the head space, and you are done.
