Did you newly installed the itunes? If not, make sure its updated and also login your id in it. Also install it from. Microsoft store

when i restored and everything fine , the itunes didnt show the restore back up , but i can find the back up folder and i cant find the file named [ info.plist ] for changing the setting from ios 18 to 17 , please help me sir .

Please check in both parts, info.plist file could be at 1 of 2 places, i have shown BOTH. Check at both places you'll find it

dont do it, 4ukey is not free- that is if you want to remove the screen time passcode, it is only free if you want to remove the apple id otherwise its not free

iTunes is outdated. They changed iTunes into Apple Music, iCloud, apple devices etc into separate apps all in Microsoft store. You should now use apple devices to restore. Just like this video hold shift and hit restore to select version of iOS you downloaded. The new apps work a lot better and faster than iTunes

You can always downgrade iOS firmware as long as the iOS version is still signed by Apple. You can also restore ALL idevices without having to update simply by holding Shift key while pressing "Restore" button on computer, even If the iOS version is not signed anymore as long as you restore with the exact same ios firmware version installed on idevice It will work. Thats It !

For downgrading to unsigned versions you need SAME version's saved shsh2 blobs, and this method is not working for now as well.
