Honey is indeed different from sugar, and using it in a stir-fry can change the taste and texture of the dish for several reasons: 1) Heat tolerance: honey caramelizes faster at high temperatures and can burn. When stir-frying, this can create a bitter taste and negatively affect the aroma of the dish, since honey does not withstand high temperatures as well as sugar. 2) Different texture: honey is thicker and more viscous than sugar. When added to a stir-fry, it can create a sticky texture that prevents the ingredients from distributing evenly, especially if the honey does not have time to dissolve. Sugar, on the other hand, melts easily, forming a thin glaze. 3) Aroma and flavor: honey has its own, quite strong aroma, which does not always go well with other ingredients. In Asian cuisine, more neutral or specially selected sweet ingredients are used so as not to overshadow the main flavor of the dish. 4) Ingredients: Honey contains more water than sugar. Moisture can affect the texture and consistency of the stir-fry, making it more moist, which is undesirable, especially when frying quickly at high heat, where it is important to preserve the textures of the ingredients. If you want sweetness in your stir-fry, it is better to use sugar, be it cane or beet, which is designed for cooking at high temperatures. Good luck!

@@GalaSway Hello! I bought this noodle in a Japanese supermarket, it is sealed and has a shelf life of 5 days in the refrigerator. It is called "Fresh Hand-cut Noodles". Do not cook or do any heat treatment before putting it in the pot. You need to put the noodles on top of the lentils and meat, cover the pot first to "steam" the noodles, and then stir. Good luck!
