Eggs keep cookies softer also and cookies with no eggs are crisper. I wonder if it would work to use one egg or no eggs and maybe increase the baking powder a little. Just a thought. I may have to try these. They sure look good!

Hi to you! I, like you are also on low carb-keto diet. Love Carb quik and getting into more and more baking. You mentioned the browning is a problem so I may have an answer. I bake Eggwhite breads. I’m a 70 lb. loser so with bread, the browning effect is adding 1 tablespoon of Allulose in the mix. It might work for your cookies. Love your recipe. I have all the ingredients. I think 1/2 cup chocolate chips is plenty because they do melt.

We are wonderfully made to be able to mix and match and find our own best flavors.
