We were on the Celebrity Eclipse as it sailed through Prins Christian Sund. Aft balcony cabin! Thank you for posting this. It was a truly magical day, perfect weather, breath-taking scenery. We feel incredibly fortunate to have experienced this.

It all happened within the last one week. I was with a group of 14 from Reading on Princess Caribbean. Absolute amazing scenery which I bet everyone thoroughly enjoyed. This was unplanned as we missed other ports. Yes we met Eclipse waving at each other. Thanks for sharing the video. 10 out of 10

Very interesting video. Thoughtful, and full of interesting twists to the usual "pour-stir-freeze." 1. Using a frosted container to minimize crystals. 2. Gellatin for a thickener instead of protein powder. 3) waiting four hours before eating. WHY??? Does it firm up and then have a ice cream texture? Doesn't it refreeze? Or does the alcohol slow the freezing and enhance the texture?

Glad you enjoyed it. I haven’t used protein powder in any of my recipes but the original recipe called for eggs which thicken the ice cream. Also, the alcohol can stop the ice cream freezing properly so the gelatine prevents that happening. You don’t need to put it back in the freezer for 4 hours if you like it soft scoop. Hope that helps!

This looks quite good, but I’m wondering why you didn’t put in the figs & ginger as an “Add-in” rather than allowing them to drop to the bottom. I can’t wait to try the Bailey’s ice cream. Your son is adorable!
