It's because any chunks you loaded before updating to 1.21 will be the old chunks, so that for example if you built an underground base it isn't replaced by the new tricky trials structure. Venture out to some chunks that have not been loaded before the update, and they will contain the trial chambers. You can travel fast via nether. Hope this helps!

Dont worry ,my guy, wfind a wall that you can mine down till at least y = 64, and then try bridging to the closest tree I guess. Tip: be more sure your caracter will die only from the height of 23 blocks so if you see a ten block jump don't mind jumping but don't for get food to get healing
