It is a common mistake to say that renewables such as solar and wind suffer from intermittent short falls. It is a mater of scale. Yes, in a given area for periods of time wind and sunshine could be decreased. Over a wide area this is less of a problem. The cost of solar and utility size batteries is declining making solar electricity the cheapest source. Both battery storage and wide area power distribution are very effective. It may be the case that deep well geothermal electricity will make up any short falls.

Interesting you mentioned mining in non renewable but you have to mine all the materials for renewables to be manufactured. As for petroleum products they are renewable itis time that it takes for the Bio mass to become petroleum. Do a lot more research and get back to us

Proven reserves of minerals for renewable products is increasing. Also, the needed mineral mix is changing. Yes, there are problems for any kind of production.
