There are also non-religious, traditional fraternities with similar uniforms. Look up "Studentenverbindung" if you're interested in their history.

I think they are flags of various parishes in the Cologne archdiocese. The QR seems clever...there will certainly be people filming the procession with their phones, and they can use the QR code to find out about the parish or whatever the flag is for. The three banners at the beginning represent the Three Kings (Magi) who visited the newborn Christ child. This cathedral contains a shrine with relics (bones) of the three kings and is therefore a major pilgrimage site for visitors who want to venerate the relics.

There are various catholic associations/organizations in Germany in every diocese from catholic boy scouts to the order of Malta volunteers who are often represented in high mass with their flags.

The tradition of incense at Catholic services began with the Three Kings (Wisemen), adoring the Baby Jesus and presenting Him with their gifts of Gold, Incense and Myrrh, a plant. Incense signifies His Divinity, Gold His Kingship and Myrr His humanity and are forebear of His eventual death (The Jews' bodies of that time, maybe even still, were enclosed with a salve derived from the myrrh plant).
