The cheap one would be the worst to use, especially in woodwork as if you have too much pressure on the wood then start sawing or chiselling the piece the applied pressure by the clamp may cause the wood to break. The expensive one however doesn’t apply more pressure then needed making it perfect, so really the expensive clamp should win.
