First of all you don’t have to put spring onion while stir frying the veggies. There’s already onion in it and more importantly adding spring onions at this time makes it welt. It’s only meant to be added as a garnish. Secondly, always use MSG. Don’t believe old reports that state it’s unhealthy. MSG while scrambling eggs plus black pepper gives the umami flavour. Finally, abstain from using vegetables completely if possible. The star here is egg. Once you scramble your eggs, follow the steps till ginger garlic and onions are stir fried and add the rice. Use soya sauce after adding the rice, not before. Use light soya sauce if you don’t want to add salt. MSG is already salty. If you use one spoon of salt, 1/4th of a spoon of MSG will do the work. So light soya sauce and MSG means no salt required. Veggies are good for you so if you want to have veggies then that’s a different side dish that you can have along with your egg fried rice. I’m not against vegetables, just not mixed with fried rice. Trust me just this once and try to have egg fried rice on its own to taste the dish how it’s meant to be had. If it were up to me, I would make a veg manchurian gravy as a side dish to go along with my fried rice.
