PLEASE keep these videos coming. The particulars about which rack and pan are so helpful, and showing likely-made items that may not be in the CSO cookbook are greatly appreciated. I’ve had my Wolf CSO for about 3 weeks with some great successes and some failures (or I actually prefer to call them Edison moments), but learning all the time-which buttons to push and how to convert my regular from-scratch convection cooking to this new-to-me method. Next up is sourdough bread. I seriously cannot thank you enough for all your tips.

I have the contemporary cooktop and the grates will break, often. They are flimsy and will bend (the middle one in particular) if you put something heavy on it (like a pot of pasta water). It looks awesome but the grates design is their flaw. They are also expensive to replace. Be careful with this particular model since the front panel with the knob can add to the cost if you decide to change... I'm thinking of changing with the other 5 burners model with the red knobs on top. The grates are way more sturdy,

Strange that the video is meant to be discussing the M and E series but nowhere in the video do we see an E series. At 0:40 they refer to the E series but I think a different model is being shown.

when using the broil/convection feature, do we need to remove the glass turntable before doing so? vice versa, when using the microbake/micro roast feature, do we need to remove the metal racks or can we use the metal turntable?

Rectangular racks and circular risers should be used only in certain modes: Rectangular racks should be used only in the following modes: • Convection • Micro Roast • Micro Bake • Broil Circular risers should be used only in the following modes: • Convection • Micro Roast • Micro Bake • Broil • Keep Warm • Gourmet, only when instructed to use a riser • Micro Bake and Micro Roast use very little microwave power, allowing the metal racks to be used. • Do NOT use racks or risers in Microwave mode. I tried this with a whole potato and my oven began arcing. The potato had burn marks where it was touching the riser. I used the exact same settings.

HINT: you can do the same thing with a Cuisinart Steam Convection oven, about $200; sits on your microwave shelf! you can steam proof your bread dough in 30 minutes, then bake it all in the same container in 30 minutes almost in one seamless step! look up "Quickest way to make bread" on yt, shows a gal doing this! but DONT bake it at 450F like she did. 400F works. I have one, its fabulous, super easy way to make bread, oh my, no hours of proofing required.

What is the best type/kind of coffee to use with Wolf Coffee System? I heard you shouldn’t use oily beans, so it what is recommended if you like strong, rich coffee?

I bought the M series along with the speed oven almost two years ago. I finally received it last summer do to covid. I have been using the speed oven but decided to make a large pot roast last week. I have been baking pot roast in a regular oven for 25 years with no problem. I set the oven on convection 350* for three hours. I alway's cooked a roast without convection and it was alway's done in 3 hours. I am perplexed. Not only was the roast not finished but neither were the carrots and potatoes. It was a much thicker, taller roast than what I normally bake but it was on convection so I thought it wouldn't be a problem. Then I decided to cook a bake potato wrapped in foil like I always do on convection for an hour it was awful and not fully cooked. What am I doing wrong? Should I just stay away from convection and use the regular bake mode. I am beyond upset! I was afraid to even cook a turkey in it, we went out to eat instead. On the outside instruments, to the right you can see a little fan moving below the red line but the larger fan symbol to the left on the red line isn't moving. Could this be the problem? I stuck my hand in, it felt as if all fans were working. I haven't tried the regular bake modes yet I'm almost afraid to. When I make popcorn in my microwave/speed oven it takes about a min longer then in my old micro. I should have stuck with KitchenAID. or I'm doing everything wrong and have no idea how to work these modes.

Alright this is crazy. When I baked the roast I only used the red knobs. That's why I went with this oven (I thought it was simple) I'm no chef and a lousy cook.. Now you're telling me I have to go into all these modes to bake. When I went to the showroom to look at appliancses it wasn't plugged in so I just assumed all these touch modes were for series, professional cooks. Or for those who cook several dishes at one time.

@@jl6714 it sounds to me that since you’re no much of a cook and lousy chef, that this is all user error and you didn’t bother taking the time to learn how to make good use out of such a professional cooking appliance like a Wolf Oven. Just because you can afford an oven like this doesn’t necessarily mean you should be buying one. What you should’ve done is invest yourself into some culinary arts classes that will FIRST and foremost help you learn the basics of cooking and using appliances that you plan to use at home. Having an oven like this with absolutely no skills in cooking is a waste of money. Especially if you weren’t much of a cook to begin with. Lastly, what was the reason for buying such an advanced oven like this if you didn’t even think of learning how to number one COOK and two, learn how to use the oven properly??

My plan is to learn how to cook like a decent chef. I wanted an advanced oven to have the best results. I read the brochure before using it however there's a lot to it if you're not familiar. I'll be hiring someone to come to my home to teach me. I love my gas range. I'm cooking like a pro on that also love my sub z..It's the speed oven and M series oven I was having problems with, however I have learned a lot on those products since I've posted.@@ETTP.S

hi @ice3326! The racks need to be removed during any mode that is just microwave (i.e. reheating food, warming beverages, melt/soften). For any combo mode, it is okay to keep them in. I really wish Wolf would provide new instructions for the latest generation of Convection Steam Oven for 2023. I just had one installed and my controls are much different than the older versions of this oven.

So disappointed with my Wolf Speed Oven. There are spots all over the inside of the oven that are not food stains. These spots will not come off.

Hi there! This particular one is a Le Creuset enameled cast iron griddle pan. Lodge also makes a great griddle pan as well as a company called Made In. I recommend them all. Just ensure the pan has a flat bottom to make contact with the cooking surface of the Induction. If it has a raised lip around the edge of the bottom, the connection will not be made for heat transfer. Wherever you live, make sure you can have your appliances serviced by an authorized Wolf, Sub Zero, Cove, Mile and other better appliance brands. Where I live, there is only one guy in the whole city that repairs these brands.

Hi Susannah, thank you for your comment but we are filming so I do not put my hair back. It's for camera. If you have ever been in my kitchen or attended one of my demos, you would know that I always put my hair up as it is mandatory in my kitchens when are preparing food for consumption. While filming, that food is for looks, not consumption. If you had to wear your hair back for work every day, you would take advantage of the times when it is not necessary to do so :-) Thank you for being so observant.

Hi Karen, I appreciate your feedback. Plastic wraps have been reformulated over the years to eliminate plasticizers which could be potentially harmful. Plastic wrap only becomes harmful when it is heated to the temperature of melting (or burns). As always, plastic wrap should be at least one inch above food which eliminates any potential risk. Should you want more info, America's Test Kitchen has done the research and has some great articles online. As always, do what makes YOU comfortable when cooking. Cheers

Impossible to tell if a feature is on the M or the E series, what’s the difference? And only the top Pro model gets the red knobs. Sad.

Hi Dave, to clarify, each of the M and E series Wolf wall ovens have the same modes as well as the Wolf Gourmet modes. The difference between the two comes down to convection systems. The M series offers our Vertiflow system (twin towers if you look in the back of the oven) with a curved back allowing for movement of hot air throughout the cavity to all corners and slightly increased interior size. The M double oven has dual convection in both the top and bottom ovens whereas the E series is only dual convection in the top oven in a double oven configuration. The E has double fans in the back of the oven. Both ovens are dual convection but the design of the M Vertiflow system is advanced in the way air flows in the cavity. The M offers 3 interior halogen lights and the E offers 2 interior halogen lights. The remaining differences comes down to aesthetics; the M is full LED touch screen and knobs and comes with contemporary design option. The E series is LED touch screen with laser etched stainless steel and does not offer a contemporary style. I hope this helps and makes it less sad. Reach out with any additional questions.

I have both. My main home, I have two single M series ovens mounted side by side just below counter height. Below each oven is a warming drawer. For the microwave, I opted for a countertop microwave since those don't last as long as a built in. In this video, the steam oven with the pull down door is mounted way, way too high and is a safety issue when removing hot items. The woman in the video is not tall enough to safely use it nor are most men. Bad design! I hate stacked ovens as one is always too low and the other is always too high. I have seen far too many high end kitchens with the microwave mounted way too high. To elaborate the difference between an M and E series oven, both are excellent and have an E model oven in a second home which is just fine. The drawback is that it is mounted under the cooktop and the controls are difficult to read. The laser etched controls are not backlit and depending on your kitchen lighting , may be difficult to see. The ovens worth very well and can highly recommend both. If money is not a problem, go with the M. If you want to save a few dollars go with he E. The M has a better convection system, a center mounted oven cavity light but both will cook just as well.
