That pizza did not ferment and rise. Make sure to shape into dough balls once main dough is risen quite a bit but not fully. Once you mix the starter into the dough. The pizza dough would be ready to bake in 4-6 hours at room temperature. Fridge proofing foes after bulk fermenting not after mixing.

You are partially correct that is called bulk fermentation but ball fermentation is also a technique used widely.
