I remember I had a big fucking order of 97 golden pompono to filet at 7 am in the fucking morning while the customer just straight up looking at me the whole time.

Waste of fish . I cook / fry it full and eat the complete meat. Bottom line don’t waste . Btw eat with my hands safer to to avoid eating bones ouch

Good demonstration but one thing why are you not wearing a safety glove a mash safety glove on your left hand I don’t know if you’re in California or not but in California if you are cutting or fillet fish or any kind of meat it is required by law to wear a safety glove the metal mash safety glove because you may be the best butcher in the city but you can always make a mistake and it only take a second to slide your fingers open or your hand open or slide off your fingers yes it Only take a moment it’s very very easy to get stitches it’s very very easy to make a dash to the emergency room so please wear a safety glove no matter what state you’re in. For your own sake
