This is great! Thank you for the video! I’m a ramen fan from Australia, trying to replicate Japanese ramen as best I can at home. Considering buying one of these machines to help me deal with low hydration kansui noodles. Impossible to find one of these machines locally so I’m considering buying one from yahoo auctions Japan. Having seen your video I guess if I buy a cheap one that’s a little rusty I could get it working like new.

thank you for watching! for your low hydration noodle, this type of ramen machine is perfect! it built very solid and can work with hard low hydration dough that pasta machine can't handle!

is there any point to the glueing ceremony [rather than just drilling holes and inserting the metal tubes]? like, is it difficult to get them parallel?
