Hi, the recipe I have for the Gramercy Gingerbread cake does not have pepper or salt in it. Did you add that on your own, or did the recipe come with it? If so, please share the measurements on the salt and pepper. Thanks

The measurements are in the recipe card at the bottom of the post. It's 1/4 tsp black pepper and 1/2 tsp kosher salt.

The zucchini just adds moisture. You will NOT taste it at all. The only thing that comes through is all those wonderful fall flavors. Just don't tell 'em the name until AFTER. :)

I've looked at several videos now and this looks the best. Brown the meat, set aside, add mirepoix, add meat and wine, add broth, simmer, add barley, simmer.

Do you bulk ferment? If so for how long. I've looked at your video several times, and I printed out your recipe, and I can't find any clear instructions on bulk fermentation.

The bulk fermentation starts when the starter is added, so it's about a 4 hour bulk ferment.
