I love Nordic Ware. I took this pan and I made a coconut Matcha cake. It came out really well. I had friends that told me I should look the recipe up told them no I was coming up with my own after they tried it. Several were asking me for my recipe, so I guess they really liked it. It was good.

I hope no one lights a match close by! It looks perfect, like the ones my mother and grandmother made! They also used homemade scuppernong wine to “soak” it for two months. They wouldn’t taste a drop of alcohol their entire lives or allow it in the house but come fruitcake time, my uncles had to ask around to get the homemade wine that they wanted! I haven’t made one in years but am planning on it, even though it’s already past Christmas. Enjoyed your video!

This kind of cake has several names but in Britain, the US and Canada it is called Christmas fruitcake. In Britain it is also called Plum cake. There are many, many variations, including those that are vegan, gluten free and non alcoholic. Because I love rum cake and fruitcake, I am going to make one that I found on YT but as a vegan variety of Christmas rum fruitcake! Can’t be anything but delicious! The recipe my mother and her mother used was passed down in her family for generations. Her ancestors were from Great Britain so it looked exactly like this one going in to the oven. In countries where the English settled, you will find other varieties, too, but still similar to this. India, Australia, New Zealand, Guyana and the Caribbean have their own varieties. Look at the Caribbean Black Cake. It’s basically the same kind of cake but the fruit is soaked so long (up to a year) that the cake becomes black. I’ve never had it but it’s on my bucket list! If you want to try a really easy one to see if you like it, the Australians make one with three ingredients: self rising flour (has the salt and baking powder in it), mixed candied or dried fruit and orange juice. There are several YT videos that give the measurements. (Look up three ingredient fruitcake.). Some people use other juices, tea or milk in place of the orange juice. Hope this helps. Good baking! 😊

@@aliceg6747. There are many vegan versions on KZbin. I have seen flaxseed eggs used and aquafaba. The one with aquafaba showed it being whipped into white foam peaks. I’m not willing to go to that much trouble so I will be using flaxseed or chia seed eggs. Good for the digestive system! Have you made one yet?
