City (at least around 2017-19) was more vertical, even had more counter attacks due to the likes of Sane, Sterling, etc, though KDB & Haaland sometimes do that now. Barca would pass around to tire the opposition markers & eventually find a killer pass when no one suspects, use combination play against low blocks, or have the likes of Messi & Iniesta dribble through them. City does the combination part, but barely used dribblers aside from Sane, Mahrez & sometimes Sterling or Bernardo, who would dribble on the wings during 1v1s but they rarely did this. That's why Grealish became less entertaining under Pep than he was at Villa, as dribbling is high risk, high reward & Pep wants to limit opposition chances or counters as much as possible. This however, has changed since last season, with the signing of Nunes, Doku, Savio, due to opposition teams getting better at man-marking (which is why Arteta wants physical players who can win duels, as it's an alternative to dribbling & sometimes less risky). City's tactics are more advanced/structured, from the way they press, the use of inverted fullbacks (which Pep started at Bayern to disrupt opposition counters) & using wingers to open/spread opposition defense (at Barca, the false 9 would do that, while the wingers will act as inside forwards, similar to Mane & Salah), but they incorporated elements of Barca's tiki taka & built their own stuff on it. Pep advanced the tactics due to lessons learnt from defeats & the fact that he doesn't have Messi or the midfield trio he had at Barca & even though he could've replicated that midfield, he has had to adapt to the modern game, as the novelty has worn off & many teams today will be better at stopping that Barca than the teams of that era.
