Wood-fired ovens are great for that smoky flavor that you just can't beat. I got mine from ilFornino, and I have to say, I'm really happy with it! It makes delicious pizzas every time.

I needed you to test at least 3 common kitchen ovens for insulation properties. Not outdoor, pizza-type ovens. This is no help.

Hello, I recently started running a market stall in the UK selling pizzas and as they are served outside and it is the winter , I don’t have the luxury of stretching the dough inside. What would you recommend for keeping the dough balls warm enough outside in cold temperatures? I am thinking of putting a hot water bottle inside a thermal bag with the pizza trays, but I suspect it might risk over proofing. Any advice would be greatly appreciated!

Hey, I'm having the same troubles. I did a test in a friend's backyard and my pizza doug didn't stretch, it was horribly embarrassing. Also, I'm working with a stainless steel table, so I don't know if that's a problem too for the dough to stretch. Greetings from Chihuahua, México.

I would never use that much yeast in my poolish way too much it will turn to alcohol before you build those really nice flavors that good pizza shops have.

Recommend blanching the leaves to make them soft. Sauteed they remain tough. :P

I was following the recipe fine and then turned around to put $2 of beet leaves in a $5,000 pizza oven and could not find it. Ill saute it on the stove instead.

I like to cut these in about 2 inch squares. Pour water just over them pour in maybe 4 tablespoons maybe five of soy sauce teaspoon of hondashi you could put a 2 teaspoons of sugar in there boil it up it’s really nice

Never use aluminium foil when cooking food or aluminium cookware. The food will be tainted with aluminium and that will end up in your system. Not good.

Why didn't you peel the garlic and trim the tomatoes? You took the time to do everything else, which is spot on, I don't see the reason to skip those steps?

The garlic is wonderful broiled like this - just be sure to squeeze the garlic out before blending! The tomatoes cook down easily in the oven 😊
