I tried getting in via the track you used (Waitaanga South) in 2010 but got rained out. I eventually got there via the Tatu track in early 2011, but that was somewhat hairy as it was no longer being maintained. Pretty sure it's closed now. It's an amazing waterfall. I included it in the book 'Walks to Waterfalls.' Should add that the Waitaanga Stream is fairly large and I doubt the falls would reduce to a trickle at any point. I went in February and it was still blasting, though not as much as when you were there.

I've only been there once, but I got lucky with a few rainy days earlier in the week. Waterfalls can be hit or miss for me, so I tend to avoid them in summer. I've had a few disappointments.

Isn’t there a high chance of getting lost when you are out in the open and the path is completely covered in snow?

Not in this area. At first, in the open flats, I just waked towards the campsite in the distance. Later on you just go towards Mount Cook. In the valley path goes through vegetation or on a boardwalk, even in deep snow you'd know immediately if you are off the path :)
