Good question, traditionally it is made with clams as it complements pork well. But I can't see why not switch it up and use mussels.

I have watched this about 50times, and basically have replicated your list as it seemed well suited to what i expect will be my needs. I am almost finished watching your daily Camino vlogs and I am getting excited for my upcoming trip that I have started shopping for but have not actually sat down to do the planning for! This looks pretty yummy. Since we dont use bay leaves much here....I dont know what that adds to the recipe. but, it looks pretty good for weeknights.

Thank you 😊! From what I understand, bay leaves add a bepth of flavour and help enhance the flavour of the other ingredients. They are always removed before serving, as they are a choking hazard.

@@ClaudiaRodrigues-Wanderlust I had to get creative when I moved to Kansas and then to Alaska. My ex just sent me 8 pounds of the good stuff from Fall River lol. No problems getting kale anymore either because of smoothies (gross). So that’s a good thing! My dad’s parents were from the Azores. Settled in Southeast Massachusetts to work in the factories in the early 1900s. They both died when I was very young.

So sorry to hear that you lost your parents when you were so young. I've always wanted to visit Alaska, and Topeka in Kansas! I can imagine that it can be difficult to find some groceries in Alaska, especially Portuguese products. Lucky that you have an ex like that 😁.

@@ClaudiaRodrigues-Wanderlust Caldo Verde is my favorite. I have been eating it all my life. If you eat meat it’s really nice to put in one or two ham hocks also. Green split peas in the winter time make it thicker like a porridge.

@@ClaudiaRodrigues-Wanderlust I bought a case of Progresso lentil soup from Amazon for my emergency stash. It’s really good on egg noodles! They have a southwestern barley and bean one now also that has about half the sodium lots of fiber and protein with 200 cal for a full can. I had a little bit left over in my fridge and I mixed it with some plain noodles and chili oil. Yummy.

How do you feel about Sardines? I have to say I really love Sardines but I'm not a fan of the bones 😅... this recipe takes care of that issue.
