Yes, these are ripe bananas. You can use unripe bananas and it will be more starchy and less sweet, unripe are better for flour, ripe are better as a sweetener.

INGREDIENTS: 2 purple sweet potatoes 1 c cassava flour 2 tbsp coconut oil melted (you can melt in the microwave) (vegan butter also works) 1/2 tsp salt

DIRECTIONS: 1- Boil sweet potatoes 30-40 minutes, until you can easily poke a fork in them. 2- Mash the sweet potatoes in a bowl. 3- Add the flour, coconut oil and salt to the mashed sweet potatoes. Mix together, then knead into a dough. If it feels dry, add a splash of water. 4- Grab a chunk of the dough and roll it into a golf ball shape. This makes about 12 balls. 5- Put 1 ball in-between two pieces of parchment paper, roll with a rolling pin to form a tortilla shape with about 1/8" thickness. 6- Remove one side of the parchment paper, leave the bottom piece on it. 7- Transfer the tortilla on a hot pan dough side down with the parchment still on top. After about a minute, peel off the top parchment paper then flip and cook the other side for 1 minute. Repeat with the remaining dough.

@@stillredbullet sorry friend, the only time I seen JF in the produce section of a grocery store in the last 5 years was whole fruit cut into thirds. I seen this set up at least 3 times. Each time it wasn't just the pods but also the abundance of waste that is the majority of the fruit, skin, rind, inedible fibers seeds and fruit.

South and Southeast Asia countries have been dehydrating jackfruit and marketing them for decades. People in the West have bought dehydrated jackfruit, imported from Asia in their supermarkets since the 90s. Pointless "experiment", done wrong.
