I'm glad you enjoyed it! Ramen is famous all over the world, but surprisingly there are not many recipes for toppings. I thought that making menma was one of them, and I wanted more people to know about its role as a supporting role for ramen, so that it can be made at home. 🎅

How different are shiitake and chichitake in terms of the taste?
@maxrecipe
@maxrecipe 19 сағат бұрын
There are so many mushrooms in Japan. Among them, shiitake mushrooms have a very strong umami and dashi flavor, and are indispensable in the Japanese culinary world. Chichitake mushrooms look similar to shiitake mushrooms, but they are different. It is fair to say that the general public does not recognize chichitake mushrooms. If you have any questions, please send me another nice message. Thank you. 🎅

Recipe looks great. I'm sure it tastes fantastic. If I did this, I would not mix my fried smelt with the rest because if not consumed immediately, it would lose its crispiness. And then the fishbones become more noticeable in the palate. But that's just me, pal.

Thank you for your comment! I understand your feelings. In Japan, ice fishing for smelt is popular, and they are fried on the spot and eaten with lemon. This recipe goes very well with wine. It's a marinade that can be enjoyed for several days. 🎅

Hello Max. Shrimp fried rice is so delicious. Did you make your pickles? I know there are several different ways to make pickles in Japan.
@maxrecipe
@maxrecipe 26 күн бұрын
Yes! It's homemade pickles. It's an original miso-flavored pickle. To make it, make a paste out of miso and (Dashi:thick bonito kelp stock), cut up Chinese cabbage, cucumber, carrot, radish, etc. into large pieces, put them in a zip bag, and store them in the refrigerator. In a few days, you'll have delicious miso-flavored pickles. I like your comment! Thank you. 🎅

@@maxrecipe Wow! I have miso in my refrigerator and I have a box of Hon Dashi powder. I can make these! Thank you!
@maxrecipe
@maxrecipe 25 күн бұрын
@MrKmoconne Try making a soft yogurt-like paste with miso and strong dashi stock (hon-dashi + water)! There is no need to add salt as miso is very salty. Mix the miso paste with the vegetables and put them in. Keep in the refrigerator. After a few hours, the vegetables will naturally release moisture, so move them around occasionally. You will have delicious miso-flavored pickles in 2-3 days.(When you start picking the vegetables, don't cut them small from the beginning! It's best to pickle them in large pieces and then cut them to the desired size when you want to serve them.)🎅

If you make this hot pot dish properly, you can eat vegetables, sliced meat, and fish fillets in one pot, making it a way to serve a warm meal! Since tabletop gas stoves are common in Japan, this hot pot recipe doesn't require a kitchen in a sense. You can also enjoy the noodles in the delicious soup you made at the end. I hope this method becomes known to many people soon. Thank you for your wonderful comments! 🎅

Hello Max-san. Because of my interest in anime and food, I've noticed grilled saury depicted as a common ingredient of a Japanese breakfast in popular culture. Maybe I am incorrect. 😓 This is a fish that I will never taste because I live so far from the sea, but I always imagine it's deliciousness. Is it's taste similar to mackerel?

Thank you for your wonderful comments. The best season for sanma is autumn, but you may see thawed sanma in Japanese supermarkets. Currently, sanma is experiencing price hikes and size reductions. This may be due to global warming and overfishing. It is a very popular fish in Japan, but it is changing with the times. There are various ways to cook it, but this time I showed you how to grill it with salt and how to arrange it in a sashimi bowl. 🐟🎅 Sanma is a fish with a different flavor to mackerel. The best sanma will surprise you with its rich fat!

Thank you for your comments. Rice noodles can be enjoyed in a variety of flavors. For this recipe, I tried to make it simple with garlic and salt, taking advantage of the texture of the ingredients. I also like recipes that use Southeast Asian spices! Rice noodles have a different texture from yakisoba and yakiudon, and are one of my favorite noodles. 🎅
