Is the ukpaka supposed to have a bitter taste? I have been trying to make this dish for years, and I eventually got all the recipes. I got frozen ugba/ukpaka, but it tastes bitter. Is that okay?

No, it's not meant to be bitter. And I freeze my Ukpaka sometimes and when it defrosts it still tastes good. You may have bought the fake one. I'm so sorry about that.

@@chinazamiracle3991 I wouldn't advice that. Your food being in such close contact with sand might lead to contamination. But if you must use sand, please place 3- 4 milk/ tomato paste tins as stand to elevate the fish from the sand.

No water at all. A pot, and a stove top at the base. You can use 3-4 milk tins to create the base.
