Curious about the square pans. Why not just put 2.5 pounds of food in each tray and pre-freeze them that way? Harvest Right and others sell matching plastic covers for the trays too. What are the advantages of pre-freezing in the square pans instead?

Good questions. 👍 We do sometimes put the food directly in/on the trays. We often have many dozens of the blocks (up to 150+ blocks) in the freezer waiting for the freeze dryer. That would require up to 15 sets of trays. One of the other reasons we prefreeze in the pans is so the food is pre-portioned and ready to bag in the amounts we want. The control group did what was expected. I was surprised to see some browning on all the others, though it was where you scooped out the core.. I wonder if the metal baller had some interaction. The rest of the others appeared to have no difference between salt or ascorbic acid. I didn’t see any difference between the amounts used, though maybe it was just my failing eyesight.

I don't think it is caused by the fact that the scoop is metal, I'm pretty sure it's because of the damage the blunt "cutting" edge does to the apples. (yet another variable to test for) Next time I"ll be cutting the apples with the corer/slicer machine; the sharp knife apple slices don't turn dark as fast as the slicer machine apples do. In real life it was easy to see the difference between the 1/4 tsp and the 1/2 tsp, but they still all looked great for sitting out for 7+ hours. After stopping the test I put them in the fridge and they still looked about the same 3 days later.

It's a great shirt to wear when meeting new people. It gives you a bit of insight to how they think. (or not think) If you're meeting a new doctor and you have to give the nurse the definition of extrapolate, and they still don't get it, you may be in the wrong place! Been there, done that.

Good question! I don't know why other people cut them up, but we cut our into pieces to make them more bite sized; same reason as the small sized scoops for the ice cream. They could be freeze dried whole, but they seem to shatter a bit when eating them.

They also wondered if the "washing" the ground beef came from the dehydrating world, and just made its way into the freeze drying world when some people crossed from one to the other.

Good question. I weigh them without the thermometers before starting and after they are completely dry, before I bag them, but I leave the thermometers in while I'm doing the Dry-Check process. I remove the thermometers before weighing for the final weights @ 20:08 During the Dry-Check process @ 15:39 I'm only checking for weight loss, not the actual weight of the food, which doesn't matter at this stage, so leaving the thermometers in doesn't matter.

For most bags I print everything on the label, occasionally I hand write the last bits of info., e.g. food weight and water needed. IJBOL when you mentioned what happened to the previous impulse sealer! I’m glad I watched this all the way through before making comments or asking questions; you did a fine job of answering my questions about the Pippin apples with your coverage of the Golden. For example I was questioning why you had a jumbled mess with the Pippin trays but appeared to separate each apple out on the Golden, but your meanderings answered it. Your “bedside manner” (for my lack of being able to describe what I mean any better) has improved over your earlier videos. I can only hope mine come close to yours (considering no one will ever see my face on my channel; I am a “Mister E” after all). I hope to be able to send people to your channel and your amzn store, though I’m still trying to understand what I can and cannot do. I plan not to have any storefront links of my own.

🤣 The specs on the power relay says it can handle up to a 100 g shock, and I think that's the part that broke, so I'm guessing the sudden stop on the concrete from 3' gave it more than 100g shock. (My quick calculations said it would be. - But some of my assumptions may have been wrong) I really should try replacing the relay and see if that fixes it.

The last time I ran a load of granny smith apples I piled the peels on top of the apple slices and ran through the freeze drier, I powdered the peels. I plan on adding the peel powder the next time I bake a pie, I think the powder should add additional filling thickness and flavor, not sure. And, yes on a five tray medium the top and bottom trays are still slightly cooler

Thanks for the tray info! I never even thought of keeping the peels and using them that way. That is a great idea. If I remember right, most of the pectin is in the peels and they should be great to keep and use. I'll have to try this if/when we get more apples. - All the ones we have have been processed.

Have you ever had fruits go soft in the bag with o2 absorbers? I keep seeing people blame to big of an o2 absorbers being used as the cause. I am not sure I believe that. Thanks for the great videos.

Never. I'd like to see the math/science on that. I'll have to do some testing. We have never had anything that was properly dried and bagged get soft EXCEPT the one time we bought a batch of bad bags and had to re-dry everything we had put into those bags. @jerryfarr3175 I have had Fruits go soft in the bag with an O2 absorber in them, but I’ve been able to narrow it down to one of two things: either there was too much humidity in the room afterwards (after bagging, sealing, waiting a day or two, but then leaving the bag in the room during another freeze dry run and the humidity getting really high), OR the fruit (Black Plums) just doesn’t get fully dry. I’ve had this fruit dry, go through the weighing process @SchoolReports suggests, confirming the trays aren’t losing more weight “and should be dry” only to press the flesh part of the fruit with my fingers and it “mushes” like there’s still water in there.. returning to the freeze dryer for several more hours, weighing again and there being no change other than getting the same mushy result as I press the fruit’s meat. Believing it must be me, I bag them up, the O2 absorbers do their work, and a week later I feel the bags and can feel all the fruit inside has a rubbery feeling to it. It hasn’t happened with any other fruit I’ve freeze dried, just the Black Plums I specifically bought the freeze dryer for (these particular black plums are only available for 1 month each year, there are several varieties of black plums).

@@MisterEMystery That sounds very interesting! You wouldn't happen to know the sugar levels of your Black Plums, would you? I've read that some varieties of very sweet black plums can have brix readings of 20+, which could put them up there with the sometimes hard-to-dry pineapple. Have you freeze dried ripe Comice pears? I wonder if your plums are any thing like Comice in texture; they never get "crunchy." They do dry completely, but remain very soft and have almost no structure. Freeze dried pieces just melt in your mouth like cotton candy.

I was wondering if you can do Parmesan cheese. I did a load and there is tons of oil on bottom of pan. Is this normal.

I haven't done Parmesan cheese because we eat it too fast and never have extra. Parmesan is a very dry cheese, but I would think it should still do fine; I would probably lower the tray temperature down to maybe 80ºf or 90ºf and I would put a paper towel above and below it on the trays. I'll try to remember to try a batch sometime.

Have you done any research and sourcing on the following? Any links you can provide appreciated: 1. Rosemary extract for preventing oil/fat rancidity. Where to find the right extract in the right concentration, how to use it and how much to use. 2. Where to find O2 absorbers in case quantities but in packs of 10. 3. Where to find the gusseted single and double meal pouches for backpacking meals in bulk. I've only found them at Top Mylar, but their pricing is rather high. Pack Fresh USA doesn't sell these.

Sorry, I'm not going be of much help for you. 1) I'm not a food scientist (not close:) and I've been having a hard time understanding everything they have in the papers (organic chemistry is not something I know), but I have found a good number of papers. The more I read, the more of it that sinks in. I've yet to have a batch of apple slices last more than 2 months before getting soft and ruined. I've read thin slices and no skin is the fix....but you have left the skins on. Have you found those apple slices are lasting for years, or not? Thanks!

We almost always leave the peel on, unless we know the batch is planned for rehydrating for making apple pie or other filling. We have had no issues with the apple getting soft. - That should not happen. It is harder to freeze dry the thicker slices be cause it will take exponentially longer to dry as the thickness increases. Where a 1/8" slice may take X amount of time to dry, a 1/4" slice may take 4X to dry. Maybe they weren't 100% dry; either that or the bags are not good enough and they are allowing moisture to get through. I did have that happen once. They were perfect! @@T4nkcommander The HR bags we've used were great, but we've been very happy with the ones we've been using after we ran out of the HR bags. We still have a few bags of food in the HR bags, including more apple slices. In the oxygen absorber test video from a few days ago there is another bag of apples in a HR bag. The video was about the 7 year old OA so I didn't think to talk about the apples slices! (Unpeeled and prefect) Skins are not a problem. Peeling them before freeze drying is something we just didn't do until after making a pie with rehydrated apples that still had the peel. Have NEVER done ascorbic acid. ALWAYS have great results and no browning. Key is to get them into the freezer fast.

I'm not against vacuum sealing the bags (as long as there are oxygen absorbers included), except for the cost of the chamber vac, time (maybe a minute or two per bag, times thousands of bags), and the potential of crushing some delicate foods (if using bags), e.g. tomato slices, green beans or other delicate items. Plus, most vacuum sealers leave significantly more of oxygen in the the bags than oxygen absorbers. I suppose doing both doesn't hurt. I have no plans to get a chamber vacuum for Mylar bag sealing, though I would like to do nitrogen flushing of the bags like commercial bags are often done. (I just never got around to it) One concern I would have with vacuum sealing is that because the bag has a lower pressure on the inside vs the outside, there will be a pressure pushing the oxygen in.

I don't understand why you're wearing gloves. Is that just to keep your hands warm? If it's to keep the food on the tray sanitary, that doesn't make sense because you're touching the outside of the box which is obviously not sanitary and has been handled tons, and you even put the dirty box on the tray where you're putting the food. It's not possible to sanitize the box so it's got to be germy. So, I don't get it

Yes, it's to keep my hands warmer. I thought I said so in the video, it must be in another ice cream video. I do have the gloves on because it made a huge difference with how cold it felt. And it was sticky. There are definitely people out there with strong opinions about gloves while preparing food. I had one commenter say they wear gloves even when making a sandwich for themself. I tend to treat the freeze dried food as if I'm making it for myself. 🤣I rarely wear gloves when I'm cooking my own dinner, either. I sometimes wear gloves when the food is very cold, very hot, or when touching very peppers.

Hi, I've been binge watching your videos lately and am interested in that french fry scoop you use. Can you tell me where you found it? If you're using it for medium trays then it's 7 inches wide. All the fry scoops I've found online are at least 8 inches wide. A link to a 7 inch wide fry scoop would be greatly appreciated. Thanks.

Thanks so much for watching and for commenting! 😁 The scoop I use is one I "adjusted." After I bought the scoop off Amazon, I cut both sides off and attached 3D printed end pieces to the sides. (Taller side pieces would probably make it better) This is how I changed the scoop - Food Scoop For Freeze Dryer Tray kzbin.info/www/bejne/qqPWY2l7aZeNntE I have made an updated scoop video when I made a scoop for my sister. No cutting or adding, just warming and bending. I think it turned out even better than the first one! Thanks for watching and for commenting! Are you asking about freeze drying the dough as raw dough or as a cooked pizza? As a cooked item, pizza or not, it's pretty easy and does well. I don't think I'd bother with freeze drying it as raw dough. I plan to do a whole new pizza making and freeze drying video soon. (Soon in my world, but I'm pretty slow at getting things done:)

@@the.phoenix.k I've found that for most bread/cake type items, wrapping them in damp paper towels, putting them into a plastic bag, and giving some time, seems to work pretty well. I haven't tried it yet, but I've heard that steaming them may be successful. Most of them are also great while still dry. In the upcoming video about pizza we will try to show how to rehydrate them. Here is some older testing. (And, sorry, I have to apologize for many of my older videos. In my focus to keep my older videos very short, most of my older, shorter videos are almost devoid of information. And if so can you make a video with a tour of it and how you keep track of inventory? For example: is it better to be in a hot or air conditioned room? Texas garages get hot fast and I want to make sure my food won’t spoil or not be good! (Sorry for all the questions, I’m learning :) )

I'm not a fan of adding kitchen gadgets if you're not going to use them enough, so I not going to encourage you to get one unless you think you'll use it a lot. But, we have used ours (this one and the one we have before this one) to peel and/or just slice many, many hundreds of pounds. We just peeled and sliced 60 lbs of apples, in perfect, even slices that I never could have done by hand with a knife.
