Well one tip I learned from my ice cream job is to build the ball in the tub and its okay to overflow the scoop because you are trying to get the most ice cream in the least amount of time. Depending on how many ounces they are telling you to give depending on the size of the cup/cone

I used to work at a place where I'd be manning the grills/fryers/stoves all at once and if someone ordered raw oysters, I'd have to haul ass to the bar and shuck oysters. I wasn't very good at it to begin with and having to stop what I was doing and hope to not burn something while I'm 40ft away from it all was a daunting task. I managed to get one of the food runners to watch what was cooking while I did it, and luckily enough nothing ever went south.
