Sorry new to this. Does sheet music not tell you what scale you’re playing in? Seems like it would be simple to write GMaj scale on the paper for example instead of doing these conversions and figuring out

One f=loud, ff=very loud, fff=very, very loud. p=soft, pp=very soft, ppp=very, very soft. In your video, you have two p's and f's meaning "very, very." That is incorrect. Also, some of the notes in your video are drawn incorrectly.
