To be fair, the whole Marco's Knorr series was aimed to beginners or people wanting to cook home meals as often as possible but not having the time to devout hours to every meal I really appreciate cooking everything from scratch and I try to do it as much as I can, but very few people have the time to do so and cooking a large quantity of sauce and freeze it (as in this case) does save time and money. Besides, Ramsey's animosity against processed and canned ingredients is more aimed at the restaurant setting, as people are paying good money for something that should be better than what they could make at home. Now, if you want to catch MPW's fine dinning abilities, I do recommend his White Heat book or catch the Anti-Chef videos.
