Can you make a roux? Does the paddle cover the whole bottom! Looks kind of squarish.

The paddle is designed to stir evenly and does a good job reaching most of the bottom of the pot, even though the shape of the paddle and the pot are a bit squarish. my issue is the cleaning of the bottom heating element, it has a perforated metal around it and you can’t remove it, how do you clean it? and it has a rubber protector trim inside the cover which can leach in your food (fumes)
