Every other video I've seen on this looks like the presenter is trying to show me a magic trick. It's not an quick an easy thing to do your first time. The only bones left are some pin bones. I have another video that explains how to remove those. I generally don’t cut the pin bones out myself because you to lose some meats. When I pan fry trout most of the pin bones soften up and aren’t noticeable. If it is a large trout then the pin bones are easy to just pluck out.

Im not blaming your instructions but I regret trying this. It was a disaster. The fish was so incredibly slimy it slipped right off the towel. It was not nearly as easily split in half as the one here and remained largely a whole fish with a split down the middle. I could not for the life of me find where the break the neck nor could I grip it. I opted to cut its head off entirely. My knife, which is very sharp and small still could not get between the flesh and bone so cleanely and I could not cut through the tissue easily. In the end I made a complete shredded mess of the fish. Which was unsalvagable. I had to bury it in the garden. Again, I dont blame these instructions, but I think this technique is not for amateurs
