In the case of Mexican rice, some people may choose to wash the rice to remove excess starch and ensure a less sticky final product, while others may not see it as necessary. It ultimately comes down to personal preference and tradition. I personally don’t only when it comes to Mexican rice but I do for others such as white rice, etc. There are different ways to prepare rice based on personal preferences and cultural traditions. If you wash your rice, make sure you dry it before it goes in the oil to fry.

Street corn is typically made with margarine. They don’t sell real butter in a squeeze bottle that’s creamy like this. But you can definitely add it to yours.
