You missed a third category which is "problem solving" Tutorials are a great example. They can't fall under education because the video is meant to skip around to the part were you need to complete an action, such as repairing a broken laptop screen. These videos have weird retention graphs and they don't necessarily "teach" more or less that they "complete"

the education/entertainment divide that you described has perfectly explained my own video preferences and dislikes. I've noticed I enjoy watching some guy just talking into a camera with no cuts or editing for an hour about anything they specialize in. While a well edited big brand video repulses me upon my realization that they had not informed me of anything new in the first 30 seconds (thats a red flag that the video creators prioritize engaging vs providing value).

The bigger I got the less people I realized are actually trying - when I was first starting out it seemed so saturated but it really isn't everyone succeeds a different way so don't try to copy and paste those succeeding, definitely learn things from them but you will be the most successful doing what you are passionate about.
