I have only had Cullen Skink once that was at a pub near Loch Lomond. It was so so much better than i expected. Ill wait to have it again when I next visit bonnie Scotland bit I think your recipe does do the soup justice.

That looks delish. I eat pig liver and kidneys nearly every week. Here in Thailand, lamb and lamb kidneys are not very common. I'm sure pig kidney would taste just as nice. I use scissors to cut the membrane out. We don't want our kidneys to retain what they are meant for. Yoghourt instead of cream? A nice video.

I like pigs liver. I think it would be great. In the UK it's not quite as common, but a couple of the big supermarkets sell it.

Can't believe that you have all these curry techniques down but still don't use ghee. Okay, it's not THAT unbelievable. Still a great, well explained recipe though. You pronounce garam masala like I do, "garam mash'allah!".

Tbh, I don't use ghee as much as I should. But balti is unusual in that it doesn't use ghee. I expect you could use it though! 😀

If I break an egg, I throw it out, wash the pan, and start over. If the next egg breaks, I angrily throw the pan in the sink, skip breakfast, curse the world, and go back to bed because it's a sign the whole day will be terrible. That being said, my mother used to make kippers for dinner (never had it with eggs, although I am sure it works). They were delicious but they leave such a strong odor that you basically need to keep every window in the house open. I never see them anymore, but just as well, as the smell would linger in my apartment for days.

Such an underrated delicacy, but that means more for us connoisseurs. Also great in Moroccan dishes like couscous and lamb tagine. I prefer them halved as they keep their kidney shape! Go easy on them if you are prone to gout.
