W.A Sururu is small beef cubes which are grilled over charcoal, a very famous street food in Dar es Salaam, Tanzania. and Rojo is the Tomato chutney which is served with the sururu. Rojo means gravy in Swahili.

yes you can avoid meat tenderizer and use raw papaya juice or just marinate the meat overnight if you also don't want to use the papaya.

Yes you can skip them, the taste will be slightly different than the authentic one but you will still enjoy your Mix, You can use a little bit of tamarind paste while cooking and if you want to skip that also then make the mix as per the recipe, once it's done add lemon juice at the end as per your likeness. The video is edited while making it many times over long period. 4 pieces is how it is sold in the streets of Dar es Salaam, so sometimes when i have time I make it as authentic even at home by just threading 4 pieces of cubes but when I don't have the time and patience and when I am cooking for many people I thread in 7-8 pieces. Doing this just makes my life easier, it doesn't change the taste of the sururu though. Hope I answered your question.

It should have fat in it.so it should be light pink rather than red. But i would suggest to grind your own mince if you don't get the right mince in your city.

meat tenderizer is a white powder which you can get in supermarkets. it helps in tenderising any meat if you don't have time to marinate for longer time. you can avoid using it by marinating for atleast overnight.
