I tried one-upping my wife's recipe, who is from Kerala, but no luck. Maybe I'm doing something wrong. 'Tried this recipe and jury is out. Not sure if it was the flour I used, but I needed ~1/4 cup of water more, when kneeding it, to get the texture OK. The Naan itself was crisp, too crispy and not that doughy pull apart. Cooked on same pizza stone as I did my wife's, same temps, etc. Only thing different is the dough. She laughed and wont tell me her recipe, (we have competitive cooking going on,) or I'd post it. But hey, cool video.

I thought to myself that naan must be wonderful in a wood fired oven, because if memory serves it is traditionally cooked in a tandoor oven. And oh boy, this naan didn't disappoint. It looks so beautiful. I had to run the video back and watch it cook a second time! Hmm...tandoori chicken in a wood fired oven? I'm looking that up next.

@@shushncook I’m in the US. Right in the middle in Kansas. There should be a break in the cold and wind this week so I’m looking forward to this. I’ll definitely make garlic Naan and I also began a sourdough starter to make pizza crusts with later in the week as well!

When you measured the oven temp with the fire going you are getting a false reading. The objective is for the floor to be 700 degrees F. Also, how long did you leaving the naan in the oven to get an app time. I am guessing 4 minutes. Have you tried leaving your dough in the frig overnight? Much like we do pizza.

Tasty! How long is ghee good for? Does it solidify?

Ghee can be stored, unopened, in a cool, dark, not-necessarily-refrigerated place for 9 months. Once opened, a jar can be kept on your counter top for 3 months. Beyond that, the open jar can be stored in the refrigerator for up to 1 year. It solidifies when it goes down in temperature.
