Just use iron bars instead of signs way easier to place and makes it impossible to go underwater and get kicked out of the boat

This is from before waterlogged halfslabs was a thing, so this particular design doesn't work. If you let the water have a hole it can drain into it's fine, but otherwise having 2 water source blocks this close to each other will now create a source block in the slab between them. But if the water is "preoccupied" wanting to drain into a hole it doesn't create a source block. Use that knowledge as you like. Alternative on could just offset the left and right tracks by one or more blocks.
