These look really delicious! I have a garden FULL of cucumbers right now, and I’m looking for alternatives other than pickling…which I’ve already done plenty of. 🤦🏽♀️ Do you think freezing these would screw up the texture?

Yes. Freezing cucumber wouldn’t be good. The higher the water context the more soggy the item can get when frozen then thawed. I picture lots of watery plant cells. Then when they freeze the water expands & cracks the cell wall then when it’s thawed it mushy & broken down. I hope that makes sense because that’s what I assume happens😁
