Assalamu Alaykum Wa Rehmatu llah, I think in Hyderabadi Biryani Turmeric is okay in Chicken but in general it is not going since colour of the Meat will develop into brown colour - just said as I spend most of my youth (for work) in Hyderabad. So there I met one local Hyderabadi and great friend of mine, and he passed on this to me (The recipe ). He is very definite about his spices (in Hyd Biryani) and what amazed me, is he handpicking these spices on his own. but anyways very nice and clean presentation. Nice Biryani. What I like in Biryani is Rooz itself, Ma sha Allah Tabrek Allah, and imagining about it closing eyes, leaves you in another world. hmmm I will make my own low calorie Keto version with some chickery pockeries.

Your friend maybe right but I have always heard of turmeric as spice in this biryani from my very close Hyderabadi friends and neighbors but they always slightly varies. @@KRAFTEDKITCHEN yeah yeah, I just shared what I learned there but I am with you on a little back and forth always possible, if for good and I am making Hyderabadi Biryani from very long time now but the serious keto version which is a self learnt version still needs some addition to my version in order to bring closer to original age old version and thanks to my glucose monitor.

Agar ham rice aur chicken ki quantity change karte hai banene ke time jaise ki 750 gm chicken aur same amount rice banaye toh cook aur dum karne ke time same rakhna hai ya change karna hai? Agar karna hai toh kitna. Please bata dijye.

Rice ki layering ke baad medium high heat pe tab tak Rahein jab tak pot se steam na nikalne lage. Steam nikalne ke baad preheated tawa pe low heat pe 15-20 minute ke liya dum pe pakaayein. Switch of the heat then rest it for 15-20 minutes without opening the lid. All the best 🫶💕

I think since gravy has to be thick there is no need to add water when you are adding tomatoes and curd. They would release enough water to cook.

Water is added only to cook mutton. You rightly said onion 🧅 and tomato 🍅 and yogurt will release enough moisture for the gravy.

Thanks Dr. Kashif 💕 I did some changes in the settings this time and it sounded far better than before. Actually I record on MacBook and it is known for heating up the system which records as noise. But now I felt it was better on smart TV, phone and PC. I will still find what I can do to enhance. Thanks again 🙏
