How is it called Irish moss when it's from the Caribbean. Irish Moss grows in Irish seas. Like potatoes that originated in Peru are called Irish potatoes because they had a famine when Ireland had an exceptionally cold and wet period which did not suit the non-native potatoes, and they developed a mold that killed off the crop. The Irish potato famine makes sense, but not Irish potatoes.

3 Overripe Plantain (mashed up) 1 stick of unsalted butter (at room temperature) 1 cup of granulated sugar 2 eggs (remove the white thing attached to the egg to prevent raw smell) ½ cup to milk 1 tablespoon of Vanilla extract ¼ teaspoon of nutmeg extract ¼ teaspoon of rose water ½ of a lemon or lemon extract juice (to eliminate the egg) ½ cup of blended Oatmeal or oatmeal flour 1½ of all purpose flour 1 teaspoon of baking soda or 3 teaspoon of baking powder 1 teaspoon of cinnamon powder ¼ teaspoon of salt Preheat the oven on 350°F Cream the butter and sugar (with a whisk or mixer) Add the eggs to the butter mixture Add the mashed plantain and the rest of the wet ingredients to the butter mixture. Add the rest of the wet ingredients to the mixture Mix all together with a spatula or hand mixer but don't over mix to avoid been dry Mix all dry ingredients together Add the dry ok ingredients to the wet ingredients half at a time and mix each half properly with a spatula Add the entire mixture from the bowl to a loaf tin Shake the loaf tin to get the top of it nice and level Place the loaf tin in the over on 350°F for 1 hour. Insert a toothpick into the loaf to check of it's done otherwise bake for an extra 5 min That's it.
