You've hit the internal temp just right. Rib roast, or prime rib has a good of amount of fat and fibrous tissue. Cooking it medium helps break down those tissues and results in a more tender piece of meat. I've eaten medium rare rib roast and have no complaints, but medium seems to be much more desirable for that cut of meat in my opinion. Cooking technique was something I haven't seen before and worked beautifully. 👍👍.

whats the highest temp you can maintain consistently?

with a good fire it all depends on the doors , with them closed usually stays around 250 the more you open the doors the higher the temp , i recently did pork tenderloins and i did those at 400-450 it’s just a matter of getting use to the unit , we love cooking all kinds of stuff in it as you can see in all my videos

Love beef ribs, when I was a young man I could buy them dirt cheep at our Chinese market now not so much ! like everything ells people figured out how good they are, cheers !
