Great review, thanks for all you work. I don't drink almost any Brazilian filter coffee, this makes me curious! I don't like chocolate or cocoa notes in filter, that's why I try to avoid this origin

I'm pretty much in the same boat, but I often hear that there are a lot of Brazilian coffees out there with much more of a fruit forward feel, roasters just like to buy those sort of Brazilians because it's what consumers expect from a Brazil. Believe we have some very old one cup reviews of both on this channel but a little bit of familiarity with both outside of that too. It's been a bit since we've had either, but both are pretty well regarded as far as St. Louis based roasters go

Hey I'm from STL! As Julian said, Sump and Blueprint are the two highest regarded roasters. They are both more developed than I like, but not too dark. quarrelsome is another good option if you like heavily processed coffees, as they do interesting yeast inoculations. Comet Coffee is the best multi-roaster in town, they carry a lot of the best roasters from around the world, can't recommend them highly enough. They also usually do free public cuppings on Saturdays around 3 👀 👀👀

I grew up around STL, but haven't been back in a while. Just wanted to 2nd what @pauldaplayfulpanda3042 said about comet coffee. Their sourcing is insane. Like one of the most interesting in the US that I've come across. I know some people that worked at blueprint. Coffee is solid, but a bit developed.

@@pauldaplayfulpanda3042 Awesome,I'm from the eastside,but I hit all of the shops I can across the bridge..I really like Blueprint and they offer some really options..I like Sump as well,but to me they actually roast on the lighter side which I like,but my previous grinder didn't..Some local roasters that have impressed me recently have been Idle Roasting out of Alton,Il they roast on the modern side...Stringbean Coffee out of Maryland Heights for a more traditional cup...Goshen Coffee Roasters out of Edwardsville,Il for a variety..And Coma Coffee out of Clayton...I did like Quarrelsome when I had a cup from them inside the shop,but have never tried their beans at home..I'm always trying to find new roasters locally..I do a good bit of online buying as well and really loved Black And White Coffee Roasters,but they change so much..I got an anaerobic Gamatui from them once and it was the most uniquely tasting coffee I've ever had ! Very very boozy..I tend to go for those funky almost sour type of roast profiles,bit also like some good old traditional as well sometimes..

Only had a single dose of this at a friends and I was getting this weird rubbery quality for the first half of the cup. As it cooled some of the peachiness seemed to peek through but wasn’t enamored with this one. I may just not have pushed it hard enough.

Truthfully, Substance's coffees weren't the easiest/most consistent to brew as we got varied results throughout. This had its highs and lows, but there's a strong chance we'd have felt the same if we only had one cup. Appreciate the feedback as always!

Don't have enough familiarity with them to make a strong judgment. Believe they once did a residency at a coffee shop nearby where we participated in one of their cuppings, but that was so long ago thay I don't remember it well enough to make a judgment

Thought I'd try this as it did seem like an alternate take on funky processing but I actually liked this high clarity presentation of it even less than I normally do. Maybe it goes with the idea of leaning into what the coffee really is, but for the roasting process as well?

You felt the same way that we did in that case as we've come to expect these coffees to be so over the top and overbearing. It leads to the question as to whether or not we'd enjoy/come to expect this sort of presentation if that's the way we would have been introduced to them. We'll never know now as these types of coffee started out so heavy and this is the opposite side of that spectrum.

How does H&S compare to substance in terms of how light they roast? I have always heard about substance but have never tried their coffee.

I think it's close enough at that point that you'd be splitting hairs on delving into differences. H&S does have a bit more range as they do have a standard profile and a hyperlight option, while Substance just has one light option that's closer to the ultra-light range. Also the coffees present different given that Substance using a Loring while H&S uses a Diedrich.

Ever had the Finca Deborah roasted from the producers at savagecoffees co. (Florida)? Recently had their WBC '24 tri-champion (Terroir, Elipse, Nirvana) and they were all excellent light roasts. Aroma kicks in before grinding & after brew... my favorite was indeed Terroir with clean bergamot/floral taste. And better prices too... practically half from third party roasters per 100g (e.g. CC, Substance, Picky chemist etc)

I haven't picked up the Substance roast, but Terrior is consistently my favorite from Deborah. That Bourbon that H&S put out earlier this year is prolly in second place. Their processed stuff is hit or miss from me, but Nirvana has been really nice. Ive got an unopened bag of CC's Terrior in my freeezer that i need to get out soon. Thanks for the reminder 😉

Terroir is an absolute gem when it's done well, but agree with you on the rest (though H&S really nailed both the Iridescence and Bourbon) Hope you enjoy Coffea Circulor's version. Both were lovely with a similar but slightly different focus on each. Cheers ☕️

Being a regular substance customer, it’s pretty hard to brew (to me at least) but if you follow joachim’s recipe, everything should be fine and you have overwhelming florals/fruitiness with his coffees

If it’s only one bag you should contact Joachim, maybe it was just a defect on that bag. But really (not to be rude or anything) if it all tasted like this, the issue might be on you

We weren't planning on it giving our struggles with decaf reviews this year. Impressive to see that nearly all the kits are sold out. The kits have plenty of processing diversity so it's possible that they might be better than what we had, but we might need to ease back into decaf for now

Prodigal does have some interesting coffees a lot of the time. Really wanted Hachi. There's so much controversy around them that it's borderline political to discuss/review them at times. It will likely happen again And it's funny you feel that way as we feel we almost only do washed 😂 but it's good to know. It's pretty clear we have a very strong bias towards washed coffees

This is one of (if not) my top Ethiopian of the year. I opened mine a little later than you, so maybe I brewed more of it at peak. Wish I would've bought two bags. I had high expectations for Archers, and none of the coffees I got in this drop disappointed. Can't wait till Airworks brings them back

Julian! This is a coffee that I have been brewing at home. Often times when I see you review a coffee that we have, my wife and I will make a tasting wheel and wait to watch your review until we complete it. This has been a really fun way to compare with your results. This one turned out pretty similar in most respects for us. However, the interesting differences were in the acidity and the body. I felt that this coffee was more acidity forward (we had it at the higher side of 4) with that brightness coming in a yellow/green citrus. That body was a 3 for us. Not quite as thin as some other coffees we've had recently. I could see maybe a 2, but we were surprised to see the rare 1 on your score for body. Either way, this was a fun coffee. My wife and I agree with you that there could be a bit more sweetness to round this one out. We're curious what role the double ferment played in the processing, too. Not quite a simple washed coffee. It would be interesting to see what a normal washed would be like! Thanks for being the reason we got out the tasting wheel and took a more systematic taste of this coffee! Always fun to compare.

Guessing you might have pushed this one a little harder than we did though that wouldn't really explain the difference in body. Otherwise, possibly on us as working with this one compared to all those DNA Altered coffees could have skewed our own perception. @CoffeeReviews Thank you! Hope yours is going well, too. Funny enough, this time we've switched. I kept this one lower on the extraction. It could be the rest too, as we've just got to about 45 days off roast. I'll have to keep some to try it around that 70 day mark. This tasting wheel has actually been one of the more similar ones you and I have had. I think there are a number of bigger factors such as preferred water, grinder, brewing paradigm, and just preference that may lead to some of the differences in rankings.

This is pretty disappointing for me to hear as I've wanted to try Manhattan for a long time but just have not seen them in any shops available to me. I only recently found out about some places online that could have shipped them to me, but sadly with the generally agreed upon decline, I'm not sure I can justify trying them now, particularly with how expensive they are. I'll keep an eye on the channel and in the online forums to see if/when they start to improve and perhaps then I might have a change of heart.

Best thing we can say on the subject is that it is still relatively subjective. A lot of people still rate Manhattan very high and consider them to be among the best. A lot of this sentiment comes from people that were big fans of their previous style (us included).

Kinda tricky as we're not quite as familiar with their coffees as we once were, but Letty Bermudez (and to a slightly less extent, the standard Diego Bermudez) were the ones that really put them on the map, so those would be the top ones. They do bring them back year after year.

Had a couple of Ethiopian lots from Manhattan in the last 3 or 4 months, both pretty unspectacular. But Ethiopians have seemed pretty unimpressive as a whole this year. For what it's worth, the roast level on both seemed comparable to what you might get from a Sey Ethiopian? They were both dense landraces, though. Anyway, thanks for these reviews.

Can see exactly what you're saying on the profile. The coffees act a bit unusual in general. Sey's coffees have become a bit more predictable while it's tricky to know how the Manhattan ones will shift with time

Nice review and seems that nice coffee. I have been so disappointed with last coffees from them that I have stopped buying them. As an interesting point: ONYX EU coffees are roasted by them using the ONYX roast curve and I have tested 2 and are really great so the problem is not the roaster. Might be they are changing the objective public to a large scale? For me their roast now are similar to Square Mile, for example (only and opinion and open question)

That's pretty interesting because we've been wondering what EU Onyx would be like, especially since we know Ben is roasting them and Ben demonstrated his World Class ability for years. Dutch coffee isn't particularly light by a lot of people's standards (Friedhats and, more notably, AMOC) but it also seems like their clientele is more international/European anyway. The entire shift is fascinating, but it's great to hear some feedback on it though

Interesting you find Onyx EU med-light! Our weight loss and color readings are typically around where the picky chemist is and sometimes go up to substance levels, on a couple coffees. Regardless, stoked you liked it! I worked hard on the roast approach. Typhoon is a beast. It has quickly become my favorite roaster over stronghold and Loring etc. We def have a wider range of roast degrees but yeah, our darkest single origin is lighter than like TW or Collectiv lightest @@DBDiez

We've actually been keeping our ear to the ground on them a lot to see if things start to improve, but we're yet to hear things shifting in a positive direction yet. Ben and Esther are both such talented and experienced coffee people that it feels inevitable, but this might be what they've settled on as being best for them

A lot of people believe the shift happened around the time they shifted from the Probat to the Typhoon (around the time our comparison video was released in June 2023) but I've never felt it was that simple. The coffees at that time were close enough to the point that a lot of people didn't initially notice. It was a bit later in 2023 that people started to voice a bunch of concerns. It's become a big talking point for about a year now

I have also bought a bag of this coffee and i agree with you on the vegetal qualities. Honestly, i disliked it at the beginning but after i awhile i started to associate it over-steeped jasmine tea, like consuming the tea leaf kind of situation. I thought it was quite an interesting experience because this coffee displayed another dimension of jasmine and I started to appreciate this flavor a lot more

I have to say I enjoyed all of the coffees in this set… They were all interesting even if they weren’t something I would normally choose… with the El Diviso Sidra and pizza coffee being way out there…. I think the Iris elipse turned out to be my favorite.

Tried Ilse once last winter. There's just so many really top tier roasters out there that unless they really wow me on the first purchase (I think 3 bags) then I just don't have the time or money to give a second chance. And my recollection was not good enough to give them another try. I find it easier to just stay with top tier roasters even if I pay a bit more, in the long run that to me is a better value.

You make an interesting point. Think we've actually seen several increases over the years. Mid 2010s you saw Onyx and Sweet Bloom at around $14-$16 for 12oz/340g bags. Early 2020s you still had Manhattan/a lot of European at around $20 for 8.8oz/250g bags. It's a great thing if the producers are getting more for their efforts as they deserve it for all that they do. At the end of the day though, it's up to the consumers as to what they're willing to spend. Have seen some very interesting coffees sit on websites because the price was too high. Hopefully we can find the ideal balance one day

This is one of my favorite coffee of the year 😉, I really like the balance between sweetness/intensity and clarity . For the floral note, for me it reminds me a bit like violet
