I’ve seen people prune these in late Summer. I thought that was strange. So is it best to prune in late winter, early spring just like we would with other plants, bushes and perennials?

The shaping pruning should happen in late winter or early spring before the buds form. Damaged or dead branches can be pruned in the summer.

That was my question also…but I’m in zone 6b high desert. My 3 figs look healthy but this years heat stunted them. I’ll be getting them ready for winter as soon as they act like they are considering going dormant. October has been unseasonably warm in Colorado. I’m knitting their booties, as we chat. 😂

It may or may not be. Seed apples are called spitters. 1 out of 100 or so are true to type. Many are sour, or at least not what you are looking for. But you can get what you want, just the odds are against you

Very informative. I see that you don't always need to prune at the collar, if a branch is too long, you can cut (at a 45 degree angle) just above a bud...is that right?

Actually the native persimmon the American persimmon grows here abundantly and that's all I can grow and they are very tasty when they're ripe

Both are excellent choices, the Maekawa have a more conical shape while the Ichi-ki-kei are more round. The Maekawa can grow larger overall so that may change your planting location for your growing space.

It depends on the structure of the older tree. Late growth pruning can happen, but may take a couple years to avoid super dramatic cuts.

As the old song goes “picking UP pawpaws and putting them in my pocket.” General rule is you shouldn’t ever actually pick them from the tree. When they are ripe their skin has a give to it, like a ripe avocado. When they are ripe they will fall from the tree. “Picking up pawpaws” is better than picking them. If you give the tree a gently bump/shake, any ripe pawpaw should release and fall easily. If it doesn’t fall or isn’t already on the ground I would let it be. (Born and raised in Kentucky, been foraging pawpaws for a long time and have 8 trees in my yard, 3 from Starks.)
