Sourdough Pancakes Yield: 5 pieces Dry Ingredients: 1 cup all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1 tablespoon sugar 1/2 teaspoon fine salt Wet Ingredients: 1/2 cup sourdough discard (room temperature) 3/4 cup milk 1 small egg (room temperature) 1 tablespoon oil Instructions: Combine Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and sugar. Make the Batter: Add sourdough discard, milk, egg, and oil to the dry ingredients. Whisk vigorously until a smooth and flowing batter forms. Cook the Pancakes: Heat a flat skillet over medium heat. Pour about 1/3 cup of batter onto the skillet. Cook for 2-3 minutes, or until bubbles appear and begin to pop. Flip the pancake and cook for another 1-2 minutes. Repeat: Repeat the process with the remaining batter to make approximately 5 pancakes. Enjoy! Baking Time: 27-30 minutes Ingredients: 350g all-purpose flour 50g sugar 113g sourdough starter 177g warm water (120-130ยฐF) 56g melted unsalted butter 2g salt (1/3 tsp) egg wash Instructions: 1. Combine all ingredients, excluding salt, with a spatula. Once a dough forms, incorporate the salt and mix well. 2. The dough will be very sticky. Cover it and let it rest for 10-30 minutes. Then, knead for 8-10 minutes until smooth. 3. Cover the dough with plastic wrap and let it ferment for 12 hours, or until it doubles in size. 4. On a floured surface, divide the dough into 8 equal pieces. Roll each piece into a ball and place it on the prepared pan. 5. Cover the rolls with plastic wrap and let them rise for 2-6 hours, or until they double in size. 6. Brush the rolls with egg wash. 7. Bake in a preheated oven at 375ยฐF (190ยฐC) for 27-30 minutes. Baking Time: 20 minutes Dry Ingredients: 300 grams All-purpose flour 20 grams Granulated sugar 1 teaspoon Instant yeast 3/4 teaspoon Fine Salt Wet Ingredients: 115 grams Water 40 grams Condensed milk 1 Large egg 25 grams Unsalted butter, softened Instructions: Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, yeast, and salt. Combine Wet Ingredients: In a separate small bowl, whisk together the water, condensed milk, and egg. Mix Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients. Use a spatula to combine until just mixed. Then, stir in the softened butter until incorporated. Knead the Dough: Turn the dough onto a lightly floured surface and knead for 10-12 minutes, or until smooth and elastic.
