if we upgrade the snapshot it wont have downtime for the running prod instance, since you are upgrading the backup snapshot. The collation for the table will not be changed, the backup upgrade will check the compatibility and then proceed for the upgrade

1,if you have automated backups, you can follow the steps mentioned in the video to upgrade the backup to 8 and restore it 2, you can also try the inplace upgrade feature with RDS to make the upgrade to 8

Hi Automated snapshot will not show that, I have explained in the video how to do for automated snapshots too

Major version upgrade has to be tested with various aspects such as compatibility, performance etc Snapshots are point in backup, you can upgrade and restore them as a separate instance, The incremental sync has to be managed manually in this method. RDS also supports inlace upgrade for mysql 5.7 to mysql 8.

Yes you are correct for disabling the encryption of the table can be done by ALTER TABLE your_table_name ENCRYPTION='N'; . But for disabling the default encryption globally you have to change the parameter default_table_encryption to OFF if you are having MySQL version 8.0.16 or later.
