I have tried adding my sourdough starter before autolyse and after autolyse and there’s no difference in the end result.

I 100% agree. Running a micro-bakery means that I try to save time wherther I can. I just mix everything in together now. even the salt! and people are still raving. I think for the masses and for people that want fuss free bread baking autolyse is not needed.

@@roseb380In Poland, sourdough for dough is made of different combinations of flour and water. In the maturing leaven, wild yeast and bacteria are produced, thanks to which later beautiful bread will grow. Young sourdough may not be as strong as food yeast at first, but with time it gains strength as it gets older. personally in Your Pages There is a Guest Who Runs His Bakery. He has Polish Roots but lives in the STATES For a very long time :) "Proof Bread On KZbin! consult a peasant!

over time, we also add Bread that stays and does not sell, remains .. softened with water, etc. and processed in the later sourdough :) But remember with us there is quite a different flour, etc. etc. with you too, everything is different in Production Consult this guy with "Proof Bread" you can see that he knows it very well!

Yes, yes, yes! I definitely agree I love working on a wooden workbench. But, we got really lucky getting that workbench for a bargain. Want to start bringing in the money and then start reinvesting in new equipment. Wooden workbench is definitely up there, don't you worry :)
